Encurtidos

 Que son?
Los encurtidos son productos comestibles que alargan su vida estando sumergidos en vinagre o salmuera. No son solo ingredientes, se han ido fortaleciendo como técnica culinaria ya que aportan características especiales de sabor y color a las preparaciones. La estética gastronómica los ha hecho populares en este momento contemporáneo-creativo en el mundo. 
Los encurtidos se usan para fermentar y conservar.
What is it?
The pickled are products with a longer live thanks to be covered by  vinegar  or/and brine. Pikled are not only ingredients also in this moment of contemporary creation in gastronomy are catalogued as a technique.
You can add new fragrances, notes and flavours to your recipe presentations, defenitly this kind of products in the new cusiene are making part of the culinary evolution based in ancestral preparation.
The pickles thecnique is basically for fermentation and food preservation. 



Desde cuándo se hacen?
Pues les cuento que los encurtidos datan desde hace mil años atrás pero de la invención de la escritura! ni siquiera estamos hablando de Jesucristo, es una preparación tan antigua como la humanidad misma. Se cuenta que los Sirios encargados de introducir las aceitunas en Europa fueron pioneros en la técnica experimentando diversas formas de encurtir aceitunas.

Historical details
Ok, just to be clear the pickled are really antique! Are visible in the history of world gastronomy since 1.000 years but before humans start to write, even Jesus wasn’t a plan in that moment…are so old like humanity it is.
Culinary historians talk about Syrians and how important was the introduction of olives, for example, into Europe and how this people are developing by generations great flavours and mixture for pickled olives. Yes, Middle East and Europe cuisine are the pioneers of this method.

Los encurtidos pueden ser vegetales y las mas populares en Colombia son las cebollitas  dulces de Santander, sin embargo, se pueden encurtir desde zanahorias, cebollas rojas, zuchinni, tomates , berenjenas, olivas, frutos y hasta quesos y pescados.
Yo les dejo mi receta para un encurtido dulce con Zanahoria y cebolla roja.
I love pickled vegetables and the most popular in Colombia are little withe onions made it in Santander, in Bucaramanga are popular and taste really good with everything, perfect for share in vegan menus for example, but also you can choose: challots, red pepper, carrots, zuchinni, aubergine, tomato, olives, fruits and even you can take the risk with that beautiful creative sense of taste  and prepared with cheese or fish and vegetables!
This is one of my recipes for pickled carrot

Procedimiento / Process:
Va a necesitar un recipiente de vidrio con tapa
prepare a glass or jar with cover

-vinagre de manzana / apple vinager 
-vinagre de frutas / fruits vinager
-jengibre / ginger
-romero / rosmery
-orégano
-1 cebolla roja en julianas / red onions
-1 zanahoria en  bastones / carrot
-sal marina / salt marine and pepper mix
-mezcla de pimientas...yo recomiendo la mezclas de pimientas del putumayo de Spicarium en Cartagena


leave your pickled vegetables next to air, in a fresh conditions or better under regulated temperature, you could enjoy it for weeks! 
Are really nice with sliders, grilled proteins, salads with sesame or sunflower seeds and also in bruschettas.
